- Pound the chicken to an even ½-inch thickness, then season both sides with salt and pepper.
- Heat oil in a skillet over medium-high, add the chicken, and sear about 4 minutes per side until golden and 165°F internal. Transfer to a plate.
- Lower heat to medium, add 1 tbsp butter and garlic to the skillet, cook 30 seconds. Pour in broth and lemon juice, scrape the pan, and simmer until slightly reduced. Off heat, stir in remaining butter and parsley.
- Slice chicken against the grain, plate, and spoon sauce over the top. Serve immediately.
Notes
Let the chicken rest for 5 minutes after searing so the juices settle; this keeps the meat tender. If your sauce reduces too fast, add a splash more broth.
