Lemon Butter Salmon Recipe

Ingredients
  

  • 4 (6 oz) skin-on salmon fillets
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 3 cloves garlic
  • 1 large lemon
  • 2 tbsp chopped fresh parsley

Method
 

  1. Pat the salmon dry, season with salt and pepper. Heat the oil in a large nonstick skillet over medium-high heat. Sear skin-side down for 4 minutes, flip, and cook 2 minutes more. Transfer to a plate.
  2. Lower the heat to low. Melt the butter, stir in the garlic and cook 30 seconds. Add the lemon zest and juice, scraping up any browned bits, and stir for 1 minute.
  3. Return the salmon to the skillet, spoon sauce over the fillets for 30 seconds. Plate the salmon, spoon extra sauce on top, and scatter with parsley.

Notes

The salmon will carry over a few degrees after it leaves the pan. If you like it medium, pull it when the center is still a slightly darker pink and the flakes begin to separate.
