Lemon Butter Baked Cod Recipe

Ingredients
  

  • 4 (6 oz) cod fillets, about 1 inch thick
  • 3 tbsp unsalted butter, melted
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 cloves garlic, minced
  • Salt and black pepper
  • 2 tbsp chopped fresh parsley

Method
 

  1. Preheat oven to 400°F. Pat cod dry, season with salt and pepper, and arrange in a single layer in a baking dish.
  2. Whisk together the melted butter, lemon juice, lemon zest, and garlic. Pour evenly over the cod.
  3. Bake for 12 to 15 minutes, basting the fish with the pan sauce about halfway through, until the cod is opaque and flakes easily.
  4. Carefully lift the fillets onto plates with a spatula, spoon the warm sauce over them, and top with parsley.

Notes

If your cod fillets vary in thickness, pull the thin end a minute early and leave the thicker part another minute, you can separate the fillets gently with a fork. A squeeze of extra lemon at the table never hurts.
