- Preheat oven to 400°F. Pat cod dry, season with salt and pepper, and arrange in a single layer in a baking dish.
- Whisk together the melted butter, lemon juice, lemon zest, and garlic. Pour evenly over the cod.
- Bake for 12 to 15 minutes, basting the fish with the pan sauce about halfway through, until the cod is opaque and flakes easily.
- Carefully lift the fillets onto plates with a spatula, spoon the warm sauce over them, and top with parsley.
Notes
If your cod fillets vary in thickness, pull the thin end a minute early and leave the thicker part another minute, you can separate the fillets gently with a fork. A squeeze of extra lemon at the table never hurts.
