Lemon Blueberry Yogurt Cake Recipe

Ingredients
  

  • 1 cup plain whole-milk yogurt
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup neutral oil
  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • 1¾ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup fresh blueberries
  • 1 tbsp all-purpose flour, for dusting
  • ¾ cup powdered sugar
  • 1 to 2 tbsp fresh lemon juice

Method
 

  1. Whisk yogurt and sugar together until smooth, then whisk in eggs, oil, lemon zest, and vanilla until emulsified.
  2. In a separate bowl, whisk the 1¾ cups flour, baking powder, and salt. Fold the dry mix into the wet just until combined. Toss blueberries with the 1 tbsp flour, then fold them in gently.
  3. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment. Scrape in the batter, smooth the top, and bake 50 to 55 minutes until golden and a toothpick comes out clean. Cool in pan 10 minutes, then transfer to a rack to cool completely.
  4. Whisk powdered sugar with 1 tbsp lemon juice, adding more juice as needed to make a thick pourable glaze. Drizzle over the cooled cake, let set, and slice.

Notes

Bring the eggs and yogurt to room temperature while you gather the rest of the ingredients. A parchment sling makes lifting the cake out of the pan effortless.
