- Preheat oven to 350°F (175°C). Beat butter, sugar, and lemon zest until fluffy, 2 to 3 minutes.
- Beat in egg, vanilla, and 1 tbsp lemon juice until smooth.
- Whisk flour, baking powder, and salt. Mix into butter mixture on low. Gently fold in blueberries.
- Drop 1½-tbsp scoops onto a lined sheet, 2 inches apart. Bake 10 to 12 minutes until edges are light golden. Cool on the sheet 5 minutes, then transfer to a rack.
- Whisk powdered sugar with 2 tbsp lemon juice; add more juice as needed to drizzle. Spoon over cookies and let set 10 minutes before serving.
Notes
The glaze is optional. For a thinner glaze, use a bit more lemon juice. If your kitchen is warm and the dough feels too soft, pop it in the fridge for 10 minutes before scooping so the cookies hold their shape better.
