- Preheat oven to 350°F (175°C). Beat butter and 1/2 cup sugar until fluffy, about 2 minutes. Mix in 2 cups flour and salt until crumbly. Press into a parchment-lined 9x13-inch pan and bake 10 minutes until edges are golden.
- Whisk together 1 1/2 cups sugar, eggs, lemon juice, zest, and 1/3 cup flour until smooth, about 1 minute.
- Pour filling over hot crust, scatter blueberries on top, and bake 25 minutes until edges are set and center jiggles slightly.
- Cool completely in the pan on a wire rack, about 1 hour. Lift out, slice into squares, and serve.
Notes
Cool the bars completely before slicing for neat squares. They taste even better the next day, after the flavors have had time to come together.
