Lemon Basil Pasta Salad Recipe

Ingredients
  

  • 8 oz dry pasta (rotini, farfalle, or penne)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 small garlic clove, minced
  • 1/2 tsp salt, plus more for the pasta water
  • 1/4 tsp black pepper
  • 1/2 cup packed fresh basil leaves, torn just before serving

Method
 

  1. Bring a large pot of generously salted water to a boil. Cook the pasta until al dente, about 10 minutes. Drain and rinse under cold water until cool, then drain well.
  2. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, salt, and pepper until blended.
  3. In a large bowl, combine the cooled pasta, cherry tomatoes, red onion, and feta. Pour the dressing over and toss to coat.
  4. Just before serving, tear the basil leaves into pieces and fold through the salad. Serve immediately or chilled.

Notes

Let the dressed salad sit for 5 to 10 minutes before adding the basil so the flavors come together. If making ahead, store the dressing and basil separately and toss just before serving.
