Ingredients

  • 2 cups leftover cooked turkey, finely chopped
  • 2 cups leftover stuffing, any variety
  • 2 large eggs, divided
  • 2 tbsp turkey or chicken broth
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • vegetable oil, for pan-frying
  • salt and black pepper
  • cranberry sauce, for serving

Method

  1. Combine turkey, stuffing, 1 egg, broth, salt, and pepper in a bowl. Mix by hand until it holds together when squeezed.
  2. Roll the mixture into 16 to 18 balls, using about 2 tablespoons per ball.
  3. Set up three bowls: flour, remaining egg (beaten), and panko. Coat each ball in flour, then egg, then panko.
  4. Heat 1/4 inch of oil in a skillet over medium-high. Fry balls in batches, 3 to 4 minutes per side, until deep golden and crisp.
  5. Spoon cranberry sauce into a bowl and serve the hot balls right away.

Notes

Cranberry sauce can be homemade or store-bought. If you have leftover turkey gravy, warm it on the stove for an equally good dipping option instead of the cranberry.
