- Stir the mayonnaise, cranberry sauce, and Dijon mustard in a small bowl until smooth.
- Spread the mixture on both slices of bread. Layer the turkey on one slice, season with salt and pepper, then top with crispy shallots and arugula. Close the sandwich with the other slice, mayo side in.
- Warm a skillet over medium heat, add the butter, and lay the sandwich in the pan. Press with a heavy pan or plate and cook until deep golden, about 3 minutes. Flip, press again, and cook the second side for 2–3 minutes more.
- Rest the sandwich on a cutting board for 30 seconds, slice diagonally, and serve warm.
Notes
Best eaten right away. If making more than one, toast the sandwiches one at a time so they don’t crowd the pan and steam instead of crisp.
