Ingredients

  • 3 cups cooked turkey, shredded or chopped
  • 1 cup cooked green beans or other leftover vegetables
  • 2 cups leftover stuffing, crumbled
  • 1 cup leftover gravy, plus extra for serving
  • 2 cups leftover mashed potatoes
  • 1 cup crispy fried onions or panko breadcrumbs
  • Salt and black pepper

Method

  1. Heat the oven to 375°F (190°C). Grease a 9x13-inch baking dish. Layer the turkey and vegetables evenly in the dish.
  2. Scatter the crumbled stuffing over the turkey, then drizzle with ½ cup of the gravy.
  3. Spread the mashed potatoes over the stuffing, season with salt and pepper, and drizzle the remaining ½ cup gravy on top. Sprinkle the crispy onions or panko evenly over the potatoes.
  4. Bake for 25–30 minutes until bubbly and golden. Rest 5 minutes, then spoon onto plates with extra warm gravy.

Notes

Letting the casserole rest for a full 5 minutes after baking helps the layers set so you get neat scoops. If your potatoes came from a very thick batch, stir in a splash of milk before spreading to loosen them.
