Leftover Rice Pudding Recipe

Ingredients
  

  • 2 cups cooked white rice, cold
  • 2 cups whole milk
  • ⅓ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter (optional)
  • Pinch fine salt
  • Ground cinnamon, for finishing

Method
 

  1. Combine the milk, sugar, and salt in a saucepan over medium heat. Stir until steaming and sugar dissolves, about 5 minutes.
  2. Stir in the cold rice, reduce heat to a low simmer, and cook 10 to 12 minutes, stirring occasionally, until creamy and still loose. Turn off the heat and stir in the vanilla and butter.
  3. Spoon into bowls immediately, dust with cinnamon, and serve warm.

Notes

If the rice was unsalted, you may want a slightly larger pinch of salt for balance. The pudding thickens on standing, so serve right away for the creamiest texture.
