Leftover Meatloaf Sandwich Recipe

Ingredients
  

  • 2 thick slices leftover meatloaf, about ½ inch thick
  • 2 tbsp unsalted butter
  • 2 tbsp ketchup
  • 1 tsp brown sugar
  • ½ tsp Worcestershire sauce
  • 2 slices hearty bread
  • Lettuce leaves
  • 2 slices tomato
  • Thinly sliced red onion (optional)

Method
 

  1. Whisk ketchup, brown sugar, and Worcestershire sauce in a small bowl until smooth.
  2. Melt 1 tbsp butter in a skillet over medium heat. Sear meatloaf slices for 2–3 minutes per side until browned and crisp. Move to a plate and brush with the glaze.
  3. Add the remaining 1 tbsp butter to the skillet, reduce heat to medium-low, and toast bread for about 1 minute per side until golden.
  4. Build the sandwich on one slice of toasted bread: lettuce, tomato, glazed meatloaf, and onion. Top with the second slice, press gently, slice in half, and serve immediately.

Notes

If your leftover meatloaf is already heavily glazed, you can skip the homemade glaze and just brush on a little extra ketchup before searing. The sandwich is best eaten right away, but you can prep the glaze and slice the veggies a day ahead.
