Leftover Fried Rice Recipe

Ingredients
  

  • 3 cups cold cooked rice
  • 2 tbsp vegetable oil
  • 2 large eggs
  • 1 cup mixed vegetables
  • ½ cup diced cooked protein (optional)
  • 3 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 3 scallions, thinly sliced
  • 1 clove garlic, minced (optional)
  • Salt and white pepper to taste

Method
 

  1. Heat 1 tbsp oil in a large skillet over high heat. Scramble eggs until just set, about 30 seconds, then remove.
  2. Add remaining oil, garlic, white scallion parts, and vegetables. Stir-fry 2 to 3 minutes until crisp-tender. Add protein if using.
  3. Add rice, spread into a layer, and let sit 1 minute. Stir-fry 3 to 4 minutes until hot and crisped. Season with salt and white pepper.
  4. Return eggs, add soy sauce and sesame oil. Toss to coat. Top with scallion greens and serve.

Notes

If you don’t have day-old rice, spread freshly cooked rice on a tray and chill 15 minutes. The dish is even better with a fried egg on top. Leftover rice that’s very dry may need a sprinkle of water before frying.
