- Melt butter in a skillet over medium heat. Add leeks and a pinch of salt, then cook until soft, 8 to 10 minutes. Let cool slightly.
- Whisk eggs, half-and-half, nutmeg, salt, and pepper in a bowl until smooth. Stir in the Gruyère.
- Place a baking sheet in the oven and preheat to 375°F (190°C). Spread leeks in the frozen crust, then pour the custard on top.
- Set the filled crust on the hot baking sheet and bake 35 to 40 minutes, until puffed and the center jiggles slightly.
- Cool on a rack for 15 minutes, then slice and serve.
Notes
The quiche needs that 15-minute rest after baking to set fully and slice cleanly. If you're using a homemade crust, blind bake it for 10 minutes at 375°F before adding the filling.
