Leek and Gruyère Quiche Recipe

Ingredients
  

  • 1 tbsp unsalted butter
  • 3 medium leeks, white and light green parts only, thinly sliced
  • 4 large eggs
  • 1 cup half-and-half
  • 1/4 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup shredded Gruyère cheese
  • 1 9-inch deep-dish frozen pie crust

Method
 

  1. Melt butter in a skillet over medium heat. Add leeks and a pinch of salt, then cook until soft, 8 to 10 minutes. Let cool slightly.
  2. Whisk eggs, half-and-half, nutmeg, salt, and pepper in a bowl until smooth. Stir in the Gruyère.
  3. Place a baking sheet in the oven and preheat to 375°F (190°C). Spread leeks in the frozen crust, then pour the custard on top.
  4. Set the filled crust on the hot baking sheet and bake 35 to 40 minutes, until puffed and the center jiggles slightly.
  5. Cool on a rack for 15 minutes, then slice and serve.

Notes

The quiche needs that 15-minute rest after baking to set fully and slice cleanly. If you're using a homemade crust, blind bake it for 10 minutes at 375°F before adding the filling.
