- Brown the ground beef in a large skillet over medium-high heat for 5 to 6 minutes, then drain off all but 1 tablespoon of fat.
- Add the onion and bell peppers and cook for about 4 minutes until they start to soften.
- Stir in the garlic, paprika, oregano, salt, and pepper and cook for 30 seconds. Pour in the diced tomatoes, tomato sauce, beef broth, and rinsed rice. Bring to a boil, then cover, reduce heat to low, and simmer for 15 to 18 minutes until the rice is tender.
- Remove from heat, top with cheddar, cover, and let sit for 2 to 3 minutes until the cheese melts. Garnish with parsley and serve.
Notes
If you use precooked rice, stir in 2 cups with the tomato sauce and skip the broth, then warm through before adding cheese. The skillet will look a little soupy when you first cover it, but the rice absorbs the liquid as it simmers.
