Ingredients
  

  • 1 tbsp olive oil
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 1 lb ground beef
  • 1 small head green cabbage (about 2 lbs), cored and chopped
  • 1 cup uncooked long-grain white rice
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp brown sugar
  • Chopped fresh parsley

Method
 

  1. Preheat the oven to 375°F. In a large oven-safe skillet or Dutch oven over medium-high heat, warm the olive oil. Add onion and garlic, cook 3 minutes. Add beef, salt, and pepper, and brown for 6-8 minutes until no pink remains.
  2. Stir in tomato sauce, diced tomatoes with their juice, beef broth, Worcestershire sauce, paprika, and brown sugar. Bring to a simmer and cook 5 minutes, scraping up any browned bits.
  3. Remove from heat. Fold in the chopped cabbage and uncooked rice until everything is evenly coated. If not using an oven-safe pan, transfer to a greased 9x13-inch baking dish.
  4. Cover tightly with foil and bake 45 minutes. Uncover, stir gently, then bake another 15-20 minutes until the rice is tender and most liquid is absorbed.
  5. Rest for 10 minutes, then fluff with a fork. Scoop into bowls and top with fresh parsley before serving.

Notes

Let the casserole rest for 10 minutes after baking to let the rice finish absorbing any remaining liquid. This keeps the texture from being too loose.
