Lauki Sabzi Recipe

Ingredients
  

  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 medium onion, finely chopped
  • 1 to 2 green chilies, slit
  • 1 tsp ginger-garlic paste
  • 2 medium tomatoes, finely chopped
  • 500 g lauki, peeled and cubed
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp red chili powder (optional)
  • Salt to taste
  • ½ tsp garam masala
  • 2 tbsp chopped fresh coriander leaves

Method
 

  1. Heat oil, add cumin seeds, and let them splutter. Stir in ginger-garlic paste and green chilies, cooking for 30 seconds.
  2. Add onion and sauté until translucent, 4 to 5 minutes. Add tomatoes, turmeric, coriander powder, chili powder, and salt. Cook until tomatoes soften, about 5 minutes.
  3. Add cubed lauki, stir to coat, then cover and cook on low heat for 12 to 15 minutes until tender, stirring once.
  4. Turn off the heat, sprinkle garam masala and coriander. Toss and serve warm.

Notes

Taste a small piece of raw lauki before cooking. If it is bitter, throw the whole gourd away. The sabzi tastes even better after a few hours as the spices meld.
