- Heat oil, add cumin seeds, and let them splutter. Stir in ginger-garlic paste and green chilies, cooking for 30 seconds.
- Add onion and sauté until translucent, 4 to 5 minutes. Add tomatoes, turmeric, coriander powder, chili powder, and salt. Cook until tomatoes soften, about 5 minutes.
- Add cubed lauki, stir to coat, then cover and cook on low heat for 12 to 15 minutes until tender, stirring once.
- Turn off the heat, sprinkle garam masala and coriander. Toss and serve warm.
Notes
Taste a small piece of raw lauki before cooking. If it is bitter, throw the whole gourd away. The sabzi tastes even better after a few hours as the spices meld.
