Lasagna Roll Ups Recipe

Ingredients
  

  • 12 lasagna noodles
  • 15 oz whole-milk ricotta
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 1 cup shredded low-moisture mozzarella, divided
  • 1/2 cup grated Parmesan
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground nutmeg
  • 3 cups marinara sauce
  • Fresh basil leaves, for serving

Method
 

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles in boiling salted water for 8 to 9 minutes until al dente. Drain and lay flat on a towel.
  2. Mix the ricotta, spinach, 1/2 cup mozzarella, Parmesan, egg, salt, pepper, and nutmeg in a bowl until combined.
  3. Spread 1/2 cup marinara in a 9x13-inch dish. Spread about 3 tbsp filling onto each noodle, roll up, and place seam-side down in the dish.
  4. Top with remaining marinara and the last 1/2 cup mozzarella. Bake 25 to 30 minutes until bubbly and golden.
  5. Rest for 5 minutes, then serve with fresh basil.

Notes

A 5-minute rest after baking helps the filling set so the rolls hold together on the plate. Using a good jarred marinara shaves off time and still gives a deep, slow-simmered flavor. If you have homemade sauce on hand, this is a great place to use it.
