Lamb Chop Marinade Recipe

Ingredients
  

  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1 tbsp chopped fresh rosemary
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 lamb loin chops, about 1 inch thick

Method
 

  1. Whisk the oil, garlic, lemon juice, rosemary, salt, and pepper in a small bowl until the salt dissolves, about 30 seconds.
  2. Place the lamb chops in a shallow dish, pour the marinade over, and turn to coat. Refrigerate for 30 minutes to 2 hours.
  3. Remove chops from the fridge 15 minutes before cooking. Heat a skillet over medium-high heat. Lift chops from the marinade, letting excess drip off, and sear for about 4 minutes per side for medium-rare.
  4. Transfer chops to a cutting board, rest for 5 minutes, then slice and serve with any resting juices spooned over.

Notes

The marinating time is not included in prep or cook time. For best results, marinate at least 30 minutes and up to 2 hours.
