Ingredients
  

  • 4 slices thick white bread
  • 4 large eggs
  • 2 cups finely shredded green cabbage
  • ¼ cup grated carrot
  • 4 slices ham
  • 4 slices American cheese
  • 2 tbsp unsalted butter
  • 2 tsp strawberry jam
  • 2 tbsp ketchup
  • 2 tbsp mayonnaise
  • ½ tsp sugar
  • ¼ tsp salt
  • ⅛ tsp black pepper

Method
 

  1. In a bowl, toss cabbage and carrot with sugar, salt, and pepper. Crack in eggs and whisk until everything is just coated.
  2. Melt ½ tbsp butter in a nonstick skillet over medium heat. Pour in half the mixture, shape into a bread-sized square, and cook until golden and set, about 3 minutes per side. Repeat for the second patty.
  3. Butter one side of each bread slice. Toast 2 slices buttered side down until golden. Flip one slice, add ham and cheese, cover to melt. Spread jam on the other slice’s untoasted side. Repeat for second sandwich.
  4. Mix ketchup and mayo, drizzle over patties. Place patty on cheese layer, top with jam-spread bread, press gently, slice, and serve.

Notes

The patty is delicate, so use a wide spatula and flip it quickly. For an extra-crispy crust, toast the assembled sandwich in the pan for 30 seconds on each side before slicing.
