Korean Spinach Side Dish Recipe

Ingredients
  

  • 1 lb (450g) fresh spinach
  • 1 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 clove garlic, minced
  • 1 tbsp toasted sesame seeds
  • Salt, to taste

Method
 

  1. Blanch spinach in boiling water for 30 to 45 seconds until wilted and still bright green, then drain and rinse under cold water.
  2. Squeeze the spinach firmly to remove excess water, chop it roughly, and mix with soy sauce, sesame oil, garlic, and a pinch of salt.
  3. Toss with sesame seeds and serve at room temperature or chilled, with extra seeds scattered on top.

Notes

Squeezing the spinach dry is the one step that makes the difference between a clean, nutty side and a watery one. Take your time with it. The dish keeps well in the fridge for up to 3 days and tastes great cold.
