Korean Sloppy Joes Recipe

Ingredients
  

  • 1 lb ground beef, 80/20
  • ½ medium onion, diced
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • ¼ cup gochujang
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp toasted sesame oil
  • ¼ cup water
  • 4 brioche or potato buns
  • Sliced scallions and toasted sesame seeds, for topping
  • Quick-pickled cucumber or kimchi, for serving (optional)

Method
 

  1. Brown the beef in a large skillet over medium-high heat, breaking it up, until no longer pink, about 5 minutes. Drain all but 1 tablespoon of fat.
  2. Reduce heat to medium. Add the onion and cook until softened, 3 to 4 minutes. Stir in the garlic and ginger, cook 1 minute.
  3. Lower heat to medium-low. Add the gochujang, soy sauce, rice vinegar, brown sugar, sesame oil, and water. Stir until the sauce dissolves and coats the meat.
  4. Bring to a gentle simmer, then reduce heat to low. Cook for 5 to 7 minutes, stirring occasionally, until the sauce is thick and glossy.
  5. Toast the cut sides of the buns in a dry skillet or with a little butter until golden. Pile the filling onto the buns, top with scallions and sesame seeds, and serve.

Notes

The filling thickens more as it cools, so pull the pan off the heat while it still looks a little saucy. If you need to reheat leftovers, add a tablespoon of water to the skillet to loosen the sauce.
