Ingredients

  • 6 large eggs
  • ½ cup soy sauce
  • ½ cup water
  • 3 tbsp sugar
  • 3 cloves garlic, thinly sliced
  • 3 scallions, chopped
  • 1 tbsp sesame seeds, toasted
  • 1 red chili, sliced (optional)

Method

  1. Boil the eggs for 7 minutes, then transfer to an ice water bath.
  2. While the eggs cool, whisk together soy sauce, water, sugar, garlic, scallions, sesame seeds, and chili until the sugar dissolves.
  3. Peel the cooled eggs and place them in the marinade, making sure they’re mostly submerged.
  4. Marinate in the fridge at least 4 hours, preferably overnight. Serve halved, with extra sesame seeds and scallion.

Notes

Marinate at least 4 hours, but overnight gives the deepest flavor. The eggs keep in the marinade for up to 5 days and will taste saltier the longer they sit.
