Ingredients

  • 1 lb lean ground beef
  • 3 garlic cloves, minced
  • 1 tbsp grated fresh ginger
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 1 to 2 tsp gochujang
  • 4 cups cooked white rice
  • Sliced cucumber, shredded carrot, sliced green onions, and toasted sesame seeds for topping

Method

  1. Brown the ground beef in a large skillet over medium-high heat, about 5 minutes, then drain off most of the fat.
  2. Push the beef aside, add garlic and ginger, and cook 30 seconds before mixing everything together for another minute.
  3. Add the soy sauce, brown sugar, sesame oil, and gochujang. Stir and let it simmer until the sauce thickens and coats the beef, 2 to 3 minutes.
  4. Spoon the beef over bowls of warm rice, pile on the fresh toppings, and serve immediately.

Notes

Get the rice going before you touch the beef. If you like extra sauce to soak into the rice, double the soy, sugar, sesame oil, and gochujang amounts. The beef won’t suffer if it sits covered for 5 minutes while you slice the veggies.
