Korean Ground Beef Bowls Recipe

Ingredients
  

  • 1 lb lean ground beef (85/15)
  • 3 tbsp soy sauce
  • 2 tbsp packed brown sugar
  • 1 1/2 tsp toasted sesame oil
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger (or 1/2 tsp ground ginger)
  • 1 tsp gochujang or 1/2 tsp red pepper flakes (optional)
  • 2 green onions, sliced
  • 1 tsp sesame seeds
  • For serving: steamed rice, sliced cucumber, shredded carrot, kimchi (optional)

Method
 

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up, until no longer pink, about 5 minutes. Drain excess fat, leaving about 1 tablespoon in the pan.
  2. Turn heat to medium. Add garlic and ginger, stir for 30 seconds. Pour in soy sauce, brown sugar, sesame oil, and gochujang if using. Stir and cook for 1 minute.
  3. Simmer the beef, stirring occasionally, until the sauce reduces and turns glossy, 2 to 3 minutes. Add a splash of water if it gets too dry.
  4. Divide rice among bowls, top with the beef, scatter with green onions and sesame seeds. Add cucumber, carrot, or kimchi and serve immediately.

Notes

The sauce makes enough to lightly coat the beef and flavor the rice. If you love an extra saucy bowl, double the soy sauce, brown sugar, and sesame oil. Leftover beef is great in lettuce wraps the next day.
