Korean Fried Rice Recipe

Ingredients
  

  • 3 cups cooked white rice, preferably day-old and cold
  • 2 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup diced yellow onion
  • 1/2 cup diced carrot
  • 1 cup shredded cooked chicken (optional)
  • 2 large eggs
  • Neutral oil for frying
  • Thinly sliced scallions and toasted sesame seeds for garnish

Method
 

  1. Mix gochujang, soy sauce, sesame oil, and minced garlic in a small bowl. Set aside.
  2. Heat 1 tbsp oil in a large skillet over high heat. Add onion and carrot; cook, stirring often, until softened and browned, 3 to 4 minutes. Stir in chicken if using and cook 1 minute.
  3. Add cold rice and break up clumps. Spread into an even layer and cook undisturbed 2 minutes. Toss and repeat until crispy in spots, about 2 more minutes. Pour sauce over rice and toss to coat, cooking 1 minute.
  4. Wipe skillet clean, add a little oil, and fry eggs to desired doneness. Serve rice topped with eggs, scallions, and sesame seeds.

Notes

For the crispiest texture, use rice that’s been chilled overnight. If doubling the recipe, fry the rice in two batches so every grain gets charred.
