Korean Cream Cheese Buns Recipe

Ingredients
  

  • 2 1/4 tsp active dry yeast
  • 1/4 cup warm water
  • 3 tbsp granulated sugar
  • 1/2 cup whole milk
  • 4 tbsp unsalted butter, softened
  • 1 large egg
  • 1/2 tsp fine salt
  • 3 cups all-purpose flour
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 large egg, beaten with 1 tbsp water

Method
 

  1. Stir yeast, warm water, and 1 tsp sugar together. Let sit 5 to 7 minutes until foamy.
  2. Mix remaining sugar, milk, butter, egg, and salt. Add 2 cups flour, then knead in remaining flour 8 to 10 minutes until smooth and elastic.
  3. Place dough in a greased bowl, cover, and rise 1 to 1 1/2 hours until doubled.
  4. Beat cream cheese with 1/3 cup sugar, vanilla, and a pinch of salt until smooth.
  5. Punch down dough, divide into 8 pieces. Flatten each, fill with 1 to 1 1/2 tbsp cream cheese, seal tightly, and place seam-side down on a lined sheet.
  6. Cover loosely and let rise 30 to 40 minutes until puffy. Preheat oven to 350°F (180°C). Brush with egg wash.
  7. Bake 18 to 20 minutes until deep golden. Cool on sheet 5 minutes, then transfer to a rack for 10 minutes before serving.

Notes

Rise times are not included in the prep and cook estimates. Plan for about 1 1/2 to 2 hours of total rising time.
