Method
- Stir yeast, warm water, and 1 tsp sugar together. Let sit 5 to 7 minutes until foamy.
- Mix remaining sugar, milk, butter, egg, and salt. Add 2 cups flour, then knead in remaining flour 8 to 10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and rise 1 to 1 1/2 hours until doubled.
- Beat cream cheese with 1/3 cup sugar, vanilla, and a pinch of salt until smooth.
- Punch down dough, divide into 8 pieces. Flatten each, fill with 1 to 1 1/2 tbsp cream cheese, seal tightly, and place seam-side down on a lined sheet.
- Cover loosely and let rise 30 to 40 minutes until puffy. Preheat oven to 350°F (180°C). Brush with egg wash.
- Bake 18 to 20 minutes until deep golden. Cool on sheet 5 minutes, then transfer to a rack for 10 minutes before serving.
Notes
Rise times are not included in the prep and cook estimates. Plan for about 1 1/2 to 2 hours of total rising time.
