Korean Cheese Buns Recipe

Ingredients
  

  • 3 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 ¼ tsp instant yeast
  • 1 tsp salt
  • ¾ cup whole milk, warm (110°F / 43°C)
  • 3 tbsp unsalted butter, melted
  • 1 large egg, room temperature
  • 8 oz cream cheese, softened
  • 2 tbsp sugar (for filling)
  • 1 egg yolk (for wash)

Method
 

  1. Whisk flour, 2 tbsp sugar, yeast, and salt. Stir in warm milk, melted butter, and egg. Knead 8 to 10 minutes until smooth. Cover and let rise 1 hour.
  2. Beat cream cheese and 2 tbsp sugar for the filling. Punch down dough, divide into 8 pieces. Flatten, fill with a tablespoon of cream cheese, seal, and place seam-side down on a baking sheet. Cover and rise 30 minutes.
  3. Preheat oven to 350°F (175°C). Brush buns with egg yolk wash. Bake 18 to 20 minutes until golden. Brush hot buns with melted butter. Serve warm.

Notes

The rising times (about 1 hour and 30 minutes total) are not counted in the prep or cook time. For the softest crust, brush generously with butter the moment the buns come out of the oven.
