Korean Braised Potatoes (Gamja Jorim) Recipe

Ingredients
  

  • 1 lb baby potatoes or Yukon gold potatoes
  • 3 tbsp soy sauce
  • 2 tbsp sugar
  • 1 tbsp minced garlic
  • 1 tbsp sesame oil
  • 1 tbsp toasted sesame seeds
  • 1/2 cup water
  • 1 tbsp vegetable oil
  • 1 tsp gochugaru (optional)

Method
 

  1. Heat the vegetable oil in a large skillet over medium heat. Add the potatoes and sear for 5 minutes, turning occasionally, until lightly golden on the edges.
  2. Pour in the soy sauce, sugar, garlic, and water. Stir to coat the potatoes and bring to a simmer.
  3. Lower the heat to medium-low, cover, and braise for 12 minutes, shaking the pan occasionally, until the potatoes are fork-tender and the sauce is reduced by half.
  4. Uncover, turn the heat up to medium-high, and cook for 2 to 3 minutes until the sauce becomes a glossy glaze. Remove from heat, drizzle with sesame oil, sprinkle with sesame seeds, and toss gently.

Notes

These potatoes taste great warm or at room temperature, so they are perfect for meal prep or a packed lunch. For extra heat, add the gochugaru along with the braising liquid. If you are making the dish ahead, the flavors get even better after a day in the fridge.
