- In a bowl, whisk soy sauce, brown sugar, sesame oil, garlic, ginger, and pepper. Add the ground beef and toss to coat. Let marinate 5 minutes.
- In another bowl, toss cabbage, carrot, most of the green onion, rice vinegar, sugar, and salt. Set aside to soften slightly.
- Sear the beef in a hot skillet over high heat, leaving it undisturbed for 2 minutes, then break apart and cook another 2 to 3 minutes until caramelized and cooked through.
- Stir sour cream, gochujang, and lime juice together. Spoon beef onto warm tortillas, top with slaw, drizzle with crema, and scatter on sesame seeds and extra green onion.
Notes
The slaw keeps its crunch best when it is tossed just before eating, but assembling ahead and storing the components separately works well for pack-and-go lunches.
