Ingredients

  • 1 lb beef sirloin or ribeye, thinly sliced
  • ¼ cup soy sauce
  • 2 tbsp packed brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • ½ tsp black pepper
  • 2 tbsp vegetable oil
  • 1 tbsp toasted sesame seeds
  • 2 green onions, sliced on the diagonal
  • Steamed rice and lettuce leaves, for serving

Method

  1. Whisk the soy sauce, brown sugar, rice vinegar, 1 teaspoon of the sesame oil, garlic, ginger, and black pepper until the sugar dissolves.
  2. Toss the sliced beef in the marinade and let it sit at room temperature for 30 minutes, or chill up to 4 hours.
  3. Heat the vegetable oil and remaining 2 teaspoons sesame oil in a large skillet over high heat. Sear the beef in a single layer in batches for 1 to 2 minutes per side until dark and sticky.
  4. Arrange the beef on a platter, scatter with sesame seeds and green onions, and drizzle over any pan juices. Serve immediately with rice and lettuce leaves.

Notes

Marinating time is not counted in the prep or cook number; budget at least 30 minutes of hands-off wait time. If you want to stretch the meal, add sautéed carrots and onions to the pan after the beef comes out.
