Kodiak Sheet Pan Pancakes Recipe

Ingredients
  

  • 2 cups Kodiak Power Cakes mix (buttermilk or original)
  • 1 cup milk
  • 2 large eggs
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries or ½ cup mini chocolate chips (optional)

Method
 

  1. Heat oven to 425°F. In a large bowl, whisk together mix, milk, eggs, melted butter, and vanilla until just combined. Fold in any add-ins if using.
  2. Line a half sheet pan with parchment. Pour batter in and spread into an even layer. Press any toppings on top gently.
  3. Bake 8–10 minutes until golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  4. Cool in the pan for 2 minutes, lift out using the parchment, and slice into 12 squares. Serve warm with butter and syrup.

Notes

If your pancake is extra thick because of a smaller pan, bake a few minutes longer and check the center with a toothpick. For a dairy-free version, swap the milk for oat milk and use oil instead of butter. Leftovers reheat beautifully in a toaster for crisp edges.
