- Preheat the oven to 375°F (190°C) and line a 6-cup muffin tin. Whisk the milk, egg, melted butter, sugar, vanilla, and lemon zest in a bowl until smooth.
- Add the Kodiak mix, baking powder, and salt. Stir with a spatula just until combined, leaving a few small lumps.
- Toss the blueberries with 1 tbsp of the Kodiak mix from the bag, then gently fold them into the batter.
- Divide the batter evenly among the prepared cups, filling them nearly to the top. Bake 18 to 20 minutes until golden and a toothpick comes out with moist crumbs.
- Cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm.
Notes
If you use frozen blueberries, keep them frozen and expect the bake time to run a couple of minutes longer. For the best rise, check that your baking powder is not past its expiration date.
