Ingredients

  • 8 oz rotini or farfalle pasta
  • 1 cup frozen peas, thawed
  • 1 cup canned corn, drained
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1 cup cubed mild cheddar cheese
  • 1/2 cup diced ham (optional)
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method

  1. Cook pasta according to package directions in salted water until tender. Reserve 1/4 cup pasta water, then drain and rinse under cold water until cool.
  2. While pasta cooks, prepare the vegetables: dice cucumber, halve tomatoes, and cube cheese (and ham if using). Aim for 1/2 inch pieces.
  3. In a small bowl or jar, whisk together the olive oil, lemon juice, honey, salt, and pepper until combined and slightly thickened.
  4. Toss the cooled pasta with the vegetables, cheese, and dressing in a large bowl until everything is coated. Serve immediately or refrigerate for 15 minutes to let flavors blend.

Notes

This salad keeps well for up to 4 days in the fridge. If it seems dry after sitting, stir in a little more olive oil or lemon juice. Any short pasta shape works, but rotini and farfalle are the best for trapping the dressing.
