- Preheat oven to 325°F. Mix graham crumbs, ¼ cup sugar, and melted butter. Press into a 9-inch springform pan and bake 10 minutes. Cool.
- Beat cream cheese and ¾ cup sugar until smooth. Mix in sour cream, vanilla, and salt. Add eggs one at a time on low speed, then stir in lime juice and zest.
- Wrap pan in foil, set in a roasting dish, and pour boiling water halfway up the sides. Bake 55-65 minutes until edges are set and center wobbles. Turn oven off, crack door, cool inside for 1 hour. Remove from water, cool completely, then refrigerate at least 6 hours.
- Release the pan sides, slice with a hot knife, and serve each slice with whipped cream, extra lime zest, and a lime slice.
Notes
Plan ahead for the overnight chill if you can, the cheesecake firms up beautifully and the lime flavor deepens. If the top browns a little too fast while baking, lay a piece of foil loosely over the top during the last 15 minutes.
