Key Lime Cheesecake Recipe

Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • ½ cup sour cream, at room temperature
  • 1 tsp vanilla extract
  • ¼ tsp fine sea salt
  • 3 large eggs, at room temperature
  • ½ cup fresh key lime juice
  • 1 tbsp key lime zest
  • Whipped cream and thin lime slices for serving

Method
 

  1. Preheat oven to 325°F. Mix graham crumbs, ¼ cup sugar, and melted butter. Press into a 9-inch springform pan and bake 10 minutes. Cool.
  2. Beat cream cheese and ¾ cup sugar until smooth. Mix in sour cream, vanilla, and salt. Add eggs one at a time on low speed, then stir in lime juice and zest.
  3. Wrap pan in foil, set in a roasting dish, and pour boiling water halfway up the sides. Bake 55-65 minutes until edges are set and center wobbles. Turn oven off, crack door, cool inside for 1 hour. Remove from water, cool completely, then refrigerate at least 6 hours.
  4. Release the pan sides, slice with a hot knife, and serve each slice with whipped cream, extra lime zest, and a lime slice.

Notes

Plan ahead for the overnight chill if you can, the cheesecake firms up beautifully and the lime flavor deepens. If the top browns a little too fast while baking, lay a piece of foil loosely over the top during the last 15 minutes.
