Method
- Whisk together the flour, baking powder, baking soda, and salt in a bowl.
- Beat the butter and sugar until fluffy, then beat in eggs one at a time, followed by lime zest and vanilla.
- On low speed, add the flour mixture in three additions alternating with the buttermilk. Stir in the lime juice by hand just until combined.
- Pour the batter into a greased and floured bundt pan. Bake at 350°F for 50–55 minutes. Cool 10 minutes in the pan, then invert onto a rack to cool completely.
- Stir the powdered sugar with enough lime juice to make a thick but pourable glaze.
- Drizzle the glaze over the cooled cake and top with fresh lime zest.
Notes
Let the cake cool all the way before glazing, or the glaze will melt right off. The cake tastes even better the next day as the lime flavor deepens.
