- In a mixing bowl, combine the drained salmon, egg, almond flour, Dijon mustard, dill, salt, and pepper. Stir until everything is evenly mixed and holds together when pressed.
- Shape the mixture into 4 equal patties about 1/2 inch thick.
- Heat the oil in a large skillet over medium heat. When the oil shimmers, carefully place the patties in the skillet. Cook for 3 to 4 minutes per side, until deeply golden and crisp.
- Transfer the patties to a paper towel–lined plate to drain, then serve right away with lemon wedges and extra dill.
Notes
If the salmon mixture feels too wet to shape, add 1 to 2 tablespoons more almond flour. The patties can be formed ahead and chilled for an hour before frying.
