Ingredients
  

  • 2 cups super-fine almond flour
  • 1/3 cup powdered erythritol (or monk fruit sweetener)
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, melted
  • 2 large eggs
  • 1/3 cup brown sugar substitute (such as Swerve Brown or Golden Monkfruit)
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream
  • 1 1/2 cups pecan halves, roughly chopped

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment. Mix almond flour, sweetener, and salt. Stir in 6 tablespoons melted butter until crumbly, then press firmly into the pan. Bake 10-12 minutes until edges are golden.
  2. Whisk eggs, brown sugar substitute, 1/4 cup melted butter, vanilla, and heavy cream until smooth. Fold in pecans.
  3. Pour the pecan mixture over the hot crust and spread evenly. Bake 25-30 minutes, until the center is just set with a slight jiggle.
  4. Cool completely in the pan, then lift out and slice into 16 bars. Chill before serving for the cleanest cut.

Notes

Let the bars cool fully on the counter before transferring them to the fridge. Cutting them warm will make the filling slump. If the top browns too fast near the end of baking, tent it with foil.
