- Preheat oven to 375°F (190°C). Brown the beef in an oven-safe skillet over medium-high heat for about 5 minutes. Add onion, bell pepper, and garlic and cook 3 to 4 minutes until softened.
- Turn heat to medium-low. Stir in drained tomatoes, chili powder, cumin, oregano, and salt. Add cream cheese cubes and stir until fully melted and the mixture is creamy.
- Smooth the beef into an even layer. Top evenly with cheddar and Monterey jack. Bake 15 to 20 minutes until cheese is melted and edges are bubbly. Optionally broil 2 minutes for browned spots.
- Let rest 5 minutes. Spoon onto plates and top with sour cream, cilantro, and avocado.
Notes
If your skillet is not oven-safe, transfer the beef mixture to a greased 8x8 baking dish after step 2, then top with cheese and bake. The bake time may shift a couple of minutes depending on the dish shape, so watch the cheese for doneness.
