- Preheat oven to 350°F. Beat cream cheese and butter until fluffy, then mix in sweetener and vanilla. Stir in almond flour, baking powder, and salt until a dough forms.
- Wrap dough in plastic and chill for at least 30 minutes.
- Roll dough to 1/4 inch thick on a floured surface, cut into rounds, and place on lined baking sheets.
- Bake each sheet for 10 to 12 minutes until edges are pale golden, then cool on the sheet for 5 minutes.
- Transfer cookies to a wire rack to cool completely, then dust with powdered sweetener if desired.
Notes
If your kitchen is warm, chill the dough briefly between batches to keep it from getting sticky. These cookies keep at room temperature in a cookie jar and taste even better the next day.
