- Place the 2 cups mozzarella and 2 oz cream cheese in a microwave-safe bowl. Heat in bursts until melted and smooth. Stir in the almond flour, 1/4 cup sweetener, baking powder, and salt, then mix in the egg until a dough forms.
- Place the dough between two sheets of parchment paper and roll into a 10x12-inch rectangle.
- Brush the 3 tbsp melted butter over the surface. Combine the 2 tbsp sweetener and 1 tbsp cinnamon, then sprinkle evenly. Roll the dough tightly from a long side.
- Preheat oven to 350°F (175°C). Slice the log into 8 rolls and arrange in a greased baking dish. Bake 18 to 22 minutes until golden.
- Beat the softened cream cheese, powdered erythritol, heavy cream, and vanilla until smooth. Spread over warm rolls and serve.
Notes
Chill the rolled log for 10 minutes before slicing if you want neater cuts. The rolls keep well, refrigerated, for up to 4 days. Warm them gently before eating to soften the frosting.
