- In a small bowl, whisk the olive oil, lemon juice, garlic, Dijon, oregano, salt, and pepper until the mixture looks creamy and no longer separates.
- Add 1.5 to 2 pounds of chicken to a resealable bag or shallow dish, pour in the marinade, and turn to coat every piece. Seal or cover, refrigerate, and marinate for at least 30 minutes (up to 8 hours). Discard any marinade that touched raw chicken.
Notes
If you want to hang onto extra marinade, set some aside before adding the chicken. Bring it to a boil for 3 minutes if you plan to use it as a sauce. For a hint of sweetness without sugar, add a teaspoon of powdered erythritol, though it’s not necessary.
