Keto Chia Seed Pudding Recipe

Ingredients
  

  • 3 tbsp whole chia seeds
  • 1 cup unsweetened almond milk
  • 2 tbsp granulated erythritol or monk fruit sweetener
  • ½ tsp vanilla extract (optional)
  • Pinch of salt (optional)

Method
 

  1. In a bowl or jar, whisk together the almond milk, sweetener, vanilla, and salt until the sweetener dissolves. Add the chia seeds and whisk vigorously for about 1 minute to break up clumps.
  2. Cover and refrigerate for at least 4 hours, or overnight, until the seeds have absorbed the liquid and the mixture is thick and set.
  3. Stir the pudding to fluff it up, then divide between bowls or jars. Top with fresh berries, coconut flakes, or cinnamon and serve cold.

Notes

The pudding needs at least 4 hours to set; give it an overnight chill for the best texture. If it is too thick after chilling, stir in a tablespoon of almond milk to loosen it.
