- Heat oil in a large pot over medium-high. Cook onion for 3 minutes, then add beef, 1/2 tsp salt, and pepper. Brown meat, breaking it up, for 6 to 8 minutes.
- Stir in garlic and cook 30 seconds. Add cabbage and stir for about 3 minutes, until it begins to wilt.
- Add tomatoes with juices, broth, tomato paste, Italian seasoning, remaining 1/2 tsp salt, and pepper flakes. Bring to a boil, then reduce heat to low. Cover with lid slightly ajar and simmer 20 to 25 minutes.
- Remove from heat and stir in apple cider vinegar. Taste and adjust salt or pepper flakes. Ladle into bowls and serve hot.
Notes
For the best flavor, let the soup rest off the heat for 5 minutes before serving. The vinegar brightens the broth, so don’t skip it. If you’re meal prepping, this soup holds up wonderfully in the fridge for several days.
