- Melt 1 tbsp butter in a skillet over medium heat. Add the sausage and cook, breaking it apart, until browned, about 5 minutes. Transfer to a plate.
- Lower heat to medium low. Melt the remaining 1 tbsp butter. Whisk the eggs with salt and pepper, pour into the pan, and cook gently, stirring often, for 3 to 4 minutes until soft curds form. Remove from heat and stir in the cheese.
- Wipe the pan clean and warm each tortilla over medium heat for 30 seconds per side until pliable.
- Lay a tortilla flat, spoon half the egg mixture, half the sausage, and any toppings down the center. Fold in the sides, then roll tightly. Repeat with the second tortilla.
- Let both burritos rest for 1 minute, then slice each in half diagonally and serve.
Notes
Room temperature eggs scramble more evenly, so pull them from the fridge 10 minutes before you start. If you use pre-shredded cheese, toss it with a tiny pinch of cornstarch first to keep it from clumping as it melts.
