- Preheat oven to 350°F (175°C) and line a 9x5-inch loaf pan with parchment paper, leaving an overhang on two sides.
- In a large bowl, whisk melted butter, sweetener, eggs, banana extract, and vanilla until smooth, about 1 minute.
- In a separate medium bowl, stir together almond flour, coconut flour, baking powder, and salt.
- Add the dry mixture to the wet and fold with a spatula just until no dry streaks remain. Batter will be thick.
- Scrape the batter into the prepared pan, smooth the top, and bake 50 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool in the pan on a wire rack for 10 minutes, then lift out and cool completely on the rack before slicing.
Notes
For the most consistent texture, weigh your almond flour. Two cups should be about 200 grams. The bread often tastes even better the next day as the banana flavor deepens. Net carbs are roughly 3 grams per slice (subtracting fiber and erythritol).
