Method
- Preheat the oven to 425°F. Pat the thighs dry, rub with oil, and coat evenly with the salt, pepper, paprika, and garlic powder. Let rest while the oven heats if you have 15 minutes.
- Place them skin-side up in an ovenproof skillet or on a baking sheet with thyme underneath. Roast for 20 minutes at 425°F.
- Reduce the heat to 375°F and continue roasting until the skin is crisp and the internal temperature hits 175°F, about 20 to 25 minutes more.
- Rest the thighs for 5 to 10 minutes, then spoon the pan juices over the top and serve.
Notes
If the skin is not as crisp as you like, pop the thighs under the broiler for 1 to 2 minutes right at the end, watching closely so they do not burn.
