Juicy Oven Roasted Chicken Thighs Recipe

Ingredients
  

  • 2 lb (about 6) bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • 5 fresh thyme sprigs (optional)

Method
 

  1. Preheat the oven to 425°F. Pat the thighs dry, rub with oil, and coat evenly with the salt, pepper, paprika, and garlic powder. Let rest while the oven heats if you have 15 minutes.
  2. Place them skin-side up in an ovenproof skillet or on a baking sheet with thyme underneath. Roast for 20 minutes at 425°F.
  3. Reduce the heat to 375°F and continue roasting until the skin is crisp and the internal temperature hits 175°F, about 20 to 25 minutes more.
  4. Rest the thighs for 5 to 10 minutes, then spoon the pan juices over the top and serve.

Notes

If the skin is not as crisp as you like, pop the thighs under the broiler for 1 to 2 minutes right at the end, watching closely so they do not burn.
