Method
- Preheat oven to 400°F (200°C) and line a sheet pan with parchment. In a large bowl, combine all ingredients and mix gently with your hands until just blended.
- With wet hands, roll the mixture into golf-ball-sized meatballs (about 20), and place them on the prepared pan.
- Bake for 15 to 18 minutes, until the centers reach 165°F. Switch to broil and broil for 2 to 3 minutes to brown the tops.
- Squeeze fresh lemon juice over the hot meatballs, scatter with extra parsley, and serve right away.
Notes
If your feta is very salty, cut the added salt down to ¼ teaspoon. The meatballs can also be shaped a few hours ahead and refrigerated on the pan, then baked just before dinner.
