Method
- Divide beef into 8 equal balls, flatten each into a thin 4-inch patty about ¼ inch thick.
- Place one cheese square in the center of 4 patties, top with remaining patties, and pinch edges firmly to seal into ½-inch thick burgers.
- Season patties with salt and pepper, cook in a preheated skillet over medium-high heat 4-5 minutes per side until deeply browned and center reaches 160°F (71°C). Transfer to a plate.
- Spread 1 tsp butter on cut sides of each bun and toast in the same skillet 2 minutes until golden.
- Build each burger with a patty on a bottom bun, add your toppings, and serve immediately.
Notes
Let the burgers rest a minute off the heat before serving so the cheese sets slightly and won’t pour out. For a double cheese hit, top each patty with another cheese slice during the last minute of cooking, covering the pan with a lid to melt it fast.
