Method
- Mix garlic powder, onion powder, thyme, rosemary, black pepper, and paprika. Pat chicken dry, coat with the spice mixture, and let rest 5 minutes.
- Heat oil in a large skillet over medium-high. Sear chicken 5 to 6 minutes per side, until golden and cooked to 165°F (74°C). Transfer to a plate and cover.
- Add broth and lemon juice to the skillet, scraping up browned bits. Stir in cornstarch slurry and simmer 1 to 2 minutes until slightly thickened.
- Slice chicken across the grain, arrange on a plate, and spoon the pan sauce over the top. Garnish with parsley and serve.
Notes
If your chicken breasts are thicker than 1 inch, pound them to an even ¾-inch thickness before seasoning. The pan sauce can be doubled easily if you want extra for drizzling over rice or vegetables.
